Healthy food | Warm + cold

Last week I told you about my favorite breakfast. And today I'm gonna talk about my favorite lunch/dinner. Because it's a (huge) salad, it can be eaten for lunch and for dinner as well. So today I present this lovely chickpeas-salad!

What do you need (for two to three persons):
- 300 grams of chickpeas
- 1 small bag of rucola
- 1 zucchini
- 1 paprika
- 8 tablespoons of olive oil
- 1 teaspoon of tahini
- 1 teaspoon of lemon juice
- some cherry-tomatoes
- a tablespoon of oregano
- a kitchenmachine

First cut the paprika and the zucchini in peaces, including the peal. Put them in a oven-bowl and add the oregano and 4 spoons olive oil. Put it in the oven (150 degrees, half an hour). Then, make yourself some hummus. Put half of the chickenpeas in the kitchenmachine and add the other half of the olive oil, lemon juice and tahini. Add some salt and pepper afterwards. (You can also add some garlic, but I'm not a big fan of that). Take a plate or a bowl and make some kind of a bed from the rucola. Put the humus in the middle of it and spread the other half of the chickenpeas around it. And the same goes for the tomatoes. Add the zucchini and paprika in a nice way. Put some salt and pepper on the whole thing and enjoy your very healthy and vegan salad! (You can also add some avocado to it, I think that would be delicious as well!)

May you create,

Wies
